Water

 

Water is a very integral part of tea brewing, and it is also relevant to all kinds of tea. Always use fresh water for boiling. Repeatedly boiling water makes it flat and the tea too tastes stale.

 

Boil the water separately without adding tea to it when preparing any kind of Darjeeling Tea. Boil it till the bubbles start appearing and the steam starts twisting out of the spout. Do not use fully boiled water as it will cook the leaves and destroy its flavor. You can also use pre-heated tea pots as this will make your brew stay hot for a longer duration.

 

Preparation

 

Pout the boiled water to a tea pot. Measure one teaspoon or 2.5 grams per cup and add it to the boiled water in the pot. It takes about 5 minutes for the brew to be completely ready. Strain the brew into your cups or a separate tea pot otherwise the liquor will be over-brewed and may taste bitter. Your tea is now ready to be sipped.

 

Good Darjeeling is best enjoyed without adding any milk and sugar. However do enjoy the tea in your preferred manner.

 

Note

 

Never boil Darjeeling Tea directly in milk or water as it will cook the leaves and make it very bitter. Adjust duration of brewing time & quantity of leaf added to suit your taste. Let your palate be the guide.

Brewing Instructions for Flower Tea

Water

 

Water is a very integral part of tea brewing, and it is relevant to all kinds of tea. Always use fresh water for boiling. Repeatedly boiling water makes it flat and the tea too tastes stale. Boil the water separately without adding tea to it when preparing any kind of Darjeeling Tea.

 

Boil it till the bubbles start appearing and the steam starts twisting out of the spout. Make sure the water is not fully boiled as it will cook the leaves and destroy its flavor. You can also use pre-heated tea pots as this will make your brew stay hot for a longer duration.

 

Selection of tea pot and cups (Optional)

 

Flower tea can be relished in two different ways. It can either be had one flower per person where one person could get up to four cups or it can be brewed in a pot serving multiple people. Use 1 flower for every 2 person if the flower is brewed in a pot and expect to get four cups out of every flower. It is ideal to brew the tea in a transparent pot without using an infuser otherwise the flowers wont open up. The flower opens up into a rosette as shown in the picture. White bone china and transparent cups would ideal for having this delicacy.

 

Preparation in a cup

 

Keep the water ready. Make sure you have enough water depending one the number of people having the brew. You can get up to four cups per flower and one cup is around 100 ml. Put the flower in the cup and pour the boiled water to the cups. Once you have added hot water to the cup, the flower will slowly start unfurling and also the liquor color will start changing. After 4-5 minutes your first cup is ready and you can start sipping the brew. There is no need to remove the flower as it will be heavy and wont float. Keep sipping and keep adding hot water while the flower remains in the cup. You can get four cups per flower. Flower tea is enjoyed without adding any milk and sugar.

 

Preparation in a pot

 

You would normally like to brew the flowers in a pot if you are in a group. Add one flower for every two people in the pot. Now add the hot water to the pot. Wait till the flower opens up fully to a rosette as shown in the picture. This may take around 5 minutes and the water will start to change its color. Once the flower has unfurled itself your brew is ready. Pour it to the cups and keep adding water to the pot. Each flower will give you around 4 cups. Flower tea is enjoyed without adding any milk and sugar.

Never boil Darjeeling Tea directly in milk or water as it will cook the leaves and destroy its flavour. Feel free to experiment with quantity of leaf added per cup and also duration of brewing time to suit your preference
