This Japanese style Sencha green tea is produced during the spring season from high-quality green tea clones. Plucked from the highest elevated peaks of the ゴパルダラ茶園, the finely plucked leaves have less tannin which makes the tea less bitter. The leaves are plucked young and tender to produce a smooth cup. Oxidation is skipped to ensure all the essential antioxidants and polyphenols are preserved. The leaves are gently rolled which allows them to open up in the pot when brewed.
After plucking, the whole tea leaves are steamed, gently hand-rolled, polished and flattened instead of being cut to a standard Darjeeling FTGFOP1 sorting. Flattening is a long process that can take up to four hours and gives the tea leaves their unique needle-like shape. This process makes for a very smooth cup of green tea as they are sorted less and a large portion of the leaf is completely retained.
The tea has a very delicate light green-coloured liquor with a very nice vegetal and leafy flavour and sweet honey notes. The finish is very crisp and refreshing without any astringency.
